Roasted Garden Veggies Make an Easy Dinner
Desperate for a dinner idea tonight I experimented with a new recipe.  It's so easy and you can use any veggies you happen to have in your garden.  Simply slice all veggies then toss in a bowl with olive oil, salt and pepper.  I used a sweet onion, two garlic cloves, summer squash, green beans, diced tomatoes and some cherry tomatoes, fresh thyme & oregano.  Roast at 450 for about 25 minutes, then toss with pasta, a little butter, and grated parmesan.  It was surprisingly flavorful.  My two year old son gobbled it down.  I will be making this dish many more times experimenting with other veggies.
